  1. Heat the oven at 180ο C
  2. Put greaseproof paper on 2 baking pans
  3. Melt the butter with the honey in a pot in low heat and let it cool.
  4. Mix sugar, flour, baking powder, salt and herbs.
  5. Add Quaker oats and mix again
  6. Add the melted butter and honey, mix again, add the beaten eggs and the ginger.
  7. Use a teaspoon to split the mix on the baking pans leaving some space in between
  8. Bake for 8 – 10 minutes and let them cool
  9. Melt the chocolate in bain marie
  10. Dip the cold cookies in the chocolate and place them on a surface until the chocolate is frozen.

    225g unsalted butter
    100g honey
    200g soft brown sugar
    150g flour for all uses
    2 tbsp. baking powder
    1 tbsp. salt flakes
    4 tbsp. grated ginger
    2 tbsp. cinnamon
    400g Quaker oats
    2 beaten eggs
    50g sweet ginger conserve, chopped
    115g dark chocolate
