1. Mix the flour, oats and yeast with your fingers. Add the remaining ingredients (sugar, eggs, olive oil and salt) and mix again.

2. Gradually add 1¼ cup lukewarm water little by little. Knead for 15 minutes or until the mixture is completely smooth. If the dough is rough or dry, gradually add a little more water.

3. Brush the inside of a bowl with a little olive oil, place the dough in the bowl, cover and let it stand for 15 minutes.

4. Sprinkle flour on a clean flat surface and roll the dough with a rolling pin.

5. Brush a small bread baking tray with olive oil, place the dough in the tray and cover again with cling film. Wait for 40 minutes until the dough rises.

6. Put the dough in an oven preheated to 230 degrees Celsius for 20 minutes and then lower the heat to 200 degrees and bake for a further 25 minutes.

7. Let the bread cool down, cut two slices and serve with avocado slices, lemon, olive oil and salt. Garnish with feta cheese, rocket and chopped tomatoes for the ideal brunch.

    For the bread:
    2 ½ cups Quaker
    2 ½ cups wholegrain flour
    1 sachet (15g) yeast
    1 egg
    ¼ cup olive or vegetable oil
    ½  tbsp salt
    A little milk

    Toppings:
    Avocado
    Tomato
    Cottage or feta cheese
    Lemon
    Rocket
    Olive oil, salt, pepper and spices
