Sweet recipes WALNUT & CREAM CHEESE QUAKER MUFFINS

1. Preheat the oven to 100 degrees Celsius.

2. Put 12 paper muffin cups in a muffin tray.

3. Put the Quaker oats, ½ cup walnuts, all-purpose and wholegrain flour into a medium sized bowl and mix well.

4. In another medium sized bowl, beat the sugar, margarine (or butter) and the cream cheese until it has a creamy texture.

5. Add the milk, egg and vanilla extract and mix well.

6. Pour in the mixture from the first bowl and mix well, making sure the ingredients are not completely dissolved.

7. Fill in the muffin cups up to ¾ full and add walnuts on top.

8. Bake for about 20 minutes or until golden brown.

9.Let the tray cool down for 5 minutes before removing the muffins.

    ½ cup brown sugar
    ⅓ cup margarine or soft butter
    85g cream cheese
    ⅔ cup milk
    1 egg
    ½ cup walnuts
    1dstsp vanilla extract
    1 cup Quaker oats
    ½ cup all-purpose flour
    ⅓ cup wholegrain flour
    1 tbsp baking powder
    ½ dstsp salt
    Extra walnuts as required
