1. Dice the chicken in 1 cm2 cubes. Mix the Quaker oats with the curry and salt.
2. Dip the chicken cubes in the beaten egg and then in the Quaker mixture.
3. Warm the oil in a frying pan over high heat.
4. Fry the breaded chicken until light brown all over.
5. Add the chicken to a seasonal salad and serve.
(Serves two)
350-400g chicken breast fillet
150g (1 ½ cup) Quaker oats put through a blender
Pinch of curry
Pinch of salt
1 beaten egg
3 tbsp olive oil
