1.Cut the phyllo pastry into six equal squares. Brush three with olive oil and put diagonally one on top of the other.

2. Brush the outside of a ramekin with oil and place the 3 oiled pieces on and around it so they take its shape.

3. Repeat the procedure for the remaining 3 pieces of phyllo and bake on the oven tray for 12 minutes at 170 degrees Celsius.

4. When cold, tip them over on a plate and remove the ramekin.

5. Mix the yoghurt with 3 tablespoons of Quaker oats and serve in the phyllo nests.

6. Sprinkle with the remaining Quaker oats, the walnuts and pour some honey over them.

7. Garnish with fresh fruit.

 

Ingredients

    (for two nests)
    1 sheet phyllo pastry
    A little olive oil
    400g flavoured soya yoghurt
    4 tbsp Quaker oats
    1 tbsp finely chopped walnuts
    2 tbsp honey
    Seasonal  fruit
